I went to Havana. I had a cocktail at the famous bar Bodeguita del Medio where Hemingway himself once sat and drank. In honour of that experience, I wanted to create the famous classic cocktail and share with you the perfect Classic Mojito Recipe. All you need is good quality rum (I used Havana Club straight from Cuba!), fresh mint leaves, sugar and some club soda. This is a no-frills cocktail and something that should be present at every BBQ this summer. The perfect combination of white rum, mint, lime and club soda. A refreshing drink on a hot day!
Split the simple syrup, sugar and mint leaves evenly between the two glasses. Either using a muddle or the back of a wooden spoon, begin to crush the mint with the syrup in order to release the flavours. Add the rum and squeeze in half a lime (per glass). Stir and add ice. Fill up the glass to the top with club soda.

Thanks so much darling. This is such an easy drink to make as a batch for big groups. Double or triple the recipe for the amount of guests (minus the rum), place ingredients in a big jug and keep in the fridge till you need to serve.
